WASHINGTON'S OLDEST Spanish restaurant, El Bodegon, 1637 R St.
NW, has new life. The 32-year-old restaurant has been bought by Max
and Ron Salas, a father-son restaurant team from Nashville, and
they've hired a chef from Spain. Chef Paco Cozar, they say, was
making prize-winning desserts at age 19.
Now, seven years later, he comes with experience from the
kitchens of Madrid's Pinocchio and the Radisson Principe de Asturias
in Seville, as well as Washington's Taberna del Alabardero. Cozar
has added Castellan and Basque dishes to El Bodegon's menu, and
expanded the tapas list. The new owners have added valet parking in
the evening and are keeping the live flamenco music nightly and
