Fresh coconut cake, made with raw coconut taken directly from the
tropical fruit, went the way of pumpkin pie made from neck pumpkins.
Few people took the time to open and grate a real coconut when a bag
of sweetened flake coconut and a cake mix from the grocery store
shelf was so much quicker.
But recently, memories of fresh coconut cake seem to have risen
from the past, stirring increased interest in making one the way
