Article: The hole story; Here's a primer for lovers of Swiss cheese

When it comes to Swiss cheese, the eyes have it.

Eyes, in this case, refer to the big shiny holes that make Swiss so easy to identify next to its peers.

Originally produced just in Switzerland and known as Emmenthal - but now made in Austria, Bavaria, Norway and Ohio, to name a few locales - Swiss is a family of cheeses with one holey distinguishing characteristic.

And, it is the cause of this characteristic that helps give Swiss its distinctive flavor.

All cheese is made from three basic ingredients: milk, rennet (an acid extracted from the lining of an animal's stomach), and culture.
