Alas, summer is winding to a close.
Yes, it's true. Days are a little shorter; temperatures a little
lower; and the swimsuit will soon be replaced by the scarf.
If you're a shellfish lover, end-of-summer time is perfect clam
time.
Fragrant clambakes steaming in an oversized pot.
Hearty clams casino sizzling under the broiler.
And, of course glistening and raw on a plate of sweating ice, with
nothing to hinder their briny flavor but a tiny squeeze of lemon.
"Clams are good all year 'round," said Tom Kegel of Kegel's
Seafood Restaurant in Lancaster. But the end of summer seems to be
when everyone is clamoring for them.
