It looks like margarine. It tastes like margarine. But wait. It isn't margarine. And it may be why some of your favorite baking recipes haven't been turning out quite right lately.

Unbeknownst to most consumers, almost all margarines in the past year or so have been reformulated into "vegetable oil spreads" that contain more water than regular margarine.

Unwary cooks who bake an old favorite cookie recipe using what they think is their old favorite margarine may get a newfangled flop or at best, a different quality cookie.
