Grilled cheese is a sandwich with divergent personalities.
The classic, a processed American cheese with white bread, is a
sure thing on diner menus.
Alter or add a few ingredients such as tomatoes, bacon or Swiss
and the gooey concoction climbs a few rungs on the culinary ladder.
Make those ingredients unique feta, brie, nine-grain bread or
sourdough, shrimp or avocado and, suddenly, the grilled cheese on
your Limoges luncheon plates will raise nary an eyebrow.
Regardless of culinary class or cultural background, grilled
cheese has always been the epitome of comfort food. It's a sandwich
recalled from most everyone's childhood, and one that can be all
