Grace Bish, of Columbia, asks what the difference is between
baking soda and baking powder, and whether they are interchangeable.
Both are leavening agents, which means they help baked goods rise;
but the two are used under different conditions. According to About
Inc.s Web site, http://chemistry.about.com, heres the difference:
Baking soda is pure sodium bicarbonate. When baking soda is combined
with moisture and an acidic ingredient (such as yogurt or chocolate),
the resulting chemical reaction produces bubbles of carbon dioxide
that expand under oven temperatures ... The reaction begins
immediately upon mixing the ingredients, so you need to bake recipes
which call for baking soda ...
