SANDRA SPEAKMAN TRADED in her pre-med aspirations for spicy food
combinations. Today, as a co-owner of Lemon Grass Thai Restaurant in
Lancaster, she's treating people to good food. For the past four
years, Speakman, 28, a former pre-med student at Kutztown University,
has co-owned the restaurant with her mom, Vatharee Speakman, and the
chef, Maneerat McKinnell. "It's a really fun experience, seeing
people happy when they come in here and say the food is wonderful,"
Speakman says. A native of Bangkok, Thailand, Speakman moved to
Reading when she was 13. She is in the process of relocating to
Lancaster. At Kutztown, she started out as pre-med but later changed
her major to computer science. ...
