Chicken leg quarters...what a great value! They are meaty,
inexpensive, they grill easily and are available in any supermarket.
The leg quarter consists of the leg and thigh, so you end up with
both white and dark meat and there's enough of it to satisfy most
appetites.
In some parts of the South, a white barbecue sauce is used to
grill chicken and I've wanted to try this since hearing about it a
few years ago. This is a really simple recipe that requires
ingredients that are staples in most kitchen pantries. The chicken
and a potato recipe that follow require a minimum of prep time and
can be done ahead for convenience.
