New England and Mexico's Baja peninsula both share the advantage
of wonderfully fresh seafood. It's a shame fish tacos are not as
common here. In Baja, a lip-smacking plate of three typically costs
about $5, and is found everywhere. Folded within a corn or flour
tortilla, the fish is sweetly succulent, faintly tasting of the Sea
of Cortez where it was caught just hours before. The fish comes
prepared sauted or grilled in pieces, or as deep fried strips, adding
only a squeeze of fresh lime. Typical accompaniments are salsa,
avocado dip or cabbage coleslaw. Fish tacos fill the bill for modern
