Orange leaves on the trees, orange pumpkins on the doorstep,
orange squash on the table. Yet don't forget that other fall orange
favorite that lasts all winter long - the sweet potato.
Neither a yam nor a potato, whose edible tubers are underground
stems, the indigenous sweet potato is the storage root of a type of
morning glory. The misnomer "yam" was adopted to differentiate the
sweeter, brighter orange sweet potato varieties from their starchier,
lighter-fleshed cousins. True yams are of African origin, typically
sold only in Caribbean bodegas or specialty markets. Almost any so-
called "yam" found in the supermarket will actually be a sweet
potato.
