Article: Prosciutto turns pea soup into an adult treat

The timing for making split pea soup couldn't have been better! This weekend, after our first real storm, we were graced with a sunny Sunday, lots of beautiful fluffy snow. And wasn't I smug. After shoveling, I knew I had my soup waiting for me.

I made a lot of this soup. When a friend said the magic words, "I usually don't like pea soup, but I like this," she went home with a quart.

To counteract a pea soup's tendency to have the consistency of baby food, I add celery, carrots, onions and parsnips, sauteed with prosciutto. Parsnips add a nice sweetness. If you usually don't care for pea soup, you may like this recipe.
