Article: Students living the tray-less life at St. Paul's School; Educators say they want to reduce waste

To tray or not to tray? If you're a student or staff member in the St. Paul's School cafeteria, that is the question.

Rector Bill Matthews and Kurt Ellison, the school's director of food services, would say to go tray-less. The two are behind an initiative this year to remove dining trays from the cafeteria in an effort to cut down on food waste. Their hypothesis is that people will take less (unnecessary) food if they have to balance their plates in their hands.

So far, their plan is working, as most students have cast aside the red plastic trays. But there are some dissenters.
