When friends drop in unexpectedly, as will happen this time of year, it's good to have a few quick culinary tricks up your sleeve. And the microwave is a great place to turn since it can reduce cooking time to one-third.

For example, poaching a pound of chicken for a chicken salad will take about 20 minutes on the stove top, not to mention the time to boil the water. But in the microwave, the same pound of chicken will take a mere six minutes to poach, covered, on full power. Now all that's left is to shred the chicken and toss with olive oil, minced scallions and lemon juice, or about three tablespoons of a good- quality preservative-free dressing, and serve with halved pitas.
