Oh, the indignities John Sarich has endured to match cheeses with
wines. Like the time a while back when the award-winning
Seattle chef was asked to sample 30 artisan cheeses from around the
world and pair each with various reds and whites.
He'd take a sip of wine, a bite of cheese, then draw a conclusion
about whether the two were complementary or in conflict. Then came
the real dilemma, one of social graces, and one not suffered when
experts have only wines to evaluate.
"You can't spit when you have a mouthful of cheese," says Sarich,
culinary director for Ste. Michelle Wine Estates and host of the
television food and travel series "Best ...
