Oh, the indignities John Sarich has endured to match cheeses with wines. Like the time a while back when the award-winning Seattle chef was asked to sample 30 artisan cheeses from around the world and pair each with various reds and whites.

He'd take a sip of wine, a bite of cheese, then draw a conclusion about whether the two were complementary or in conflict. Then came the real dilemma, one of social graces, and one not suffered when experts have only wines to evaluate.
