ONE could easily make a case for leaving well enough alone when it comes to mashed potatoes, but our family eats them at least once per week and variations on the theme are always welcome.

In particular, I wanted a dish that would be a bit dressy for company (as a side for prime rib, for example) but not so starched- collar that the potatoes lose their earthy root vegetable appeal. There is nothing worse than a bowl of mashed potatoes that have lost their culinary roots in pursuit of star power.
