ALICIA writes: It's that time of year when I will inevitably have an abundance of ham. Almost as pressing as what to do with the leftover turkey after Thanksgiving is the conundrum of what to do with the stock of ham in the spring.

My solution this year is a delicious twist on an old favorite: Tortellini Carbonara. Although carbonara is traditionally made with bacon, we've switched to ham and are bumping up the flavor with cheese tortellini. The added benefit? It flies together in only 15 minutes.

To store all your leftover ham for this recipe, coarsely chop the ham and freeze it in heavy-duty, quart-size bags. Bag the ham in manageable 1- to 2-cup portions for future flexibility.
