Sweet potato casserole sounds like a blue-ribbon idea, but when we
turned to the Internet to find recipes we found that they included
ingredients such as chipped beef, pork, apples, candy, marshmallows,
nuts, and many kinds of booze.
It turns out that this recipe is a holiday dumping ground tailor-
made for home cooks who wish to abandon sensible culinary virtues for
wild improvisation.
Not apt to throw culinary caution to the winds, we opted to take a
more measured approach in an effort to produce a simple and
satisfying sweet potato casserole. With that in mind, we began by
testing whether or not the potatoes would have to be pre-cooked.
