Call it an occupational hazard, but I find myself trying to "desperize" long or difficult recipes at every turn. The latest case in point is my friend Linda Thornton's homemade bierocks. Bierocks are individual yeast bread rolls stuffed with a beef and cabbage mixture that are perfect for casual lunches or dinners and snacks on the go.

The flexibility of serving bierocks is only rivaled by the unique taste of delicate, slightly sweet bread surrounding the hearty meat and cabbage filling. However, a traditional recipe requires making your own yeast roll dough. That means rising, kneading and punching down - feats I haven't tried in decades!
