Making a grilled cheese sandwich seems simple enough and, as kids,
we were all perfectly happy with Mom's secret recipe.
But the editors of "Cook's Country" (the sister publication to
"Cook's Illustrated," www.cookscountry.com) decided that since the
basic concept is so good, it was a shame not to take this classic
American offering one or two steps further, turning out sandwiches
that are perfect for adults and not just kids.
The first choice is bread. Flimsy white bread made soggy
sandwiches.
Sturdy sliced bread with a fine, dense crumb (such as Arnold or
Pepperidge Farm) is a must.
