Getting to roll the last bits of pie-crust dough into cinnamon- sugar cookies is one of my cherished childhood baking memories.

Of course, Mom's crusts were homemade - a feat that rarely happens in my desperate household.

However, it's easy to get that "homemade" taste with refrigerated pie crust from the supermarket.

One of my favorite desperate triumphs is when friends ask me for my pie-crust recipe. I'm always shocked at how few people "cheat" with the refrigerated, rolled-up crusts found in narrow red boxes in the dairy department.

(Even though refrigerated crusts are available in some store brands, I can only attest to the consistent quality of Pillsbury.)
