The humble sweet potato is actually a power vegetable - in more
ways than one. Not only does the Center for Science in the Public
Interest rank the sweet potato as the world's most nutritious
vegetable, it's incredibly easy to fix, too.
Last week's column talked about popping a big batch of sweet
potatoes in the slow cooker for an effortless "baked" side dish.
The cold leftovers do double duty in today's fantastic recipe for
