Cheese is rich in milk fat and popular among consumers worldwide. The consumption of cheese is increasing steadily at ~ 3% annually in most countries. In 2004, total cheese consumption in the United States reached 8.8 billion pounds.
The nutritional value and taste are two major factors influencing cheese consumption pattern. Although cheese is a good source of protein and calcium, its high fat content has caused nutritional concern. Milk fat is considered hypercholesterolemic because of its high content of saturated fatty acids, especially lauric, myristic, and palmitic acids. Today's sophisticated consumers are demanding healthy and tasty cheese products.
