Bread regains pride of place on U.S dinner tables; health benefits still unheralded

Consumer perceptions of bread and grains have changed considerably since the height of the low-carb movement. The new weight-loss mantra is focused around moderation, balance and exercise. Fewer consumers claim to be on diets, preferring a self-prescribed approach to weight loss. This sensible approach to dieting is good news for our industry.
Consumers now have a better understanding of bread's health benefits; in fact, research conducted on behalf of Grain Foods Foundation demonstrates a noticeable shift in consumer attitudes since 2005. According to the Harris Interactive survey, three times as many people today agree bread provides health benefits than did in 2005.
