Four delectable salad toppers you can whip up in minutes
What's the difference between an everyday salad and an unforgettable one? The dressing you toss it with. A great homemade dressing can be whisked together in minutes, costs almost nothing, and most keep for a couple of weeks in the fridge.
LIGHT ROQUEFORT DRESSING
Makes 1 ½ cups * 30 minutes or fewer
Blue cheese dressing is an American favorite-but boy, can it add calories to a salad. This homemade version is lightened up with low-fat mayonnaise and fat-free buttermilk. Roquefort is a sheep's milk cheese from the south of France, but you can substitute any blue cheese. This Roquefort dressing will keep for about a week in the fridge.
