LIGHT ROQUEFORT DRESSING

Makes 1 ½ cups * 30 minutes or fewer

Blue cheese dressing is an American favorite-but boy, can it add calories to a salad. This homemade version is lightened up with low-fat mayonnaise and fat-free buttermilk. Roquefort is a sheep's milk cheese from the south of France, but you can substitute any blue cheese. This Roquefort dressing will keep for about a week in the fridge.
