* developments in methods of authenticating extra virgin olive oil including measurement of pigments, diacylglycerols and triacylglycerols;
* chemistry to streamline assessments of organoleptic quality;
* variations in the natural chemistry of extra virgin olive oil between varieties, countries, and regions;
* Southern hemisphere production and ranges of chemical qualities;
* organoleptic assessment;
* quality surveillance in Canada and Germany;
* geographic traceability; and
* the rapid development of the olive oil industry in the United States, including proposed U.S. standards for olive oil.
