Grilled Pizza Margherita
Pizza dough for four 9-inch pizzas (recipe on Page D 2)
2 cups pizza sauce (recipe follows)
1 pound fresh mozzarella cheese, thinly sliced
1/4 cup olive oil
About 12 large fresh basil leaves
If you're using a charcoal grill, light the coals and when they're covered with a gray ash, arrange them evenly around three-quarters of the grill surface. Leave about a quarter of the grill space clear of coals so you have a cooler spot in case the dough starts to char.
If you're using a gas grill, turn one burner to high and one to medium.
