Fighting cancer with a cup, or more, of green tea

Both green tea and black tea are derived from the leaves of the same plant, the tea plant (Camellia sinensis). The tea plant originated in China, but is now grown and consumed all over the globe, particularly in India, Great Britain, and the United States.

Green tea vs. black tea

Green tea is produced by lightly steaming the fresh-cut black tea leaf; to produce black tea, the leaves are oxidized. During oxidation, many of the "polyphenol" substances -- compounds with potent antioxidant and anticancer properties - are destroyed. Green tea, on the other hand, is very high in polyphenols.

Another form of tea, oolong tea, is only partially oxidized. So, it has a higher level of polyphenols ...
