Article: Collecting commercial food residuals to reach 60 percent diversion

The city is trying to increase its recycling rate from 53 percent to 60 percent by the year 2005. Assuming no additional increase in the annual volume of waste generation, the commercial sector will have to recycle an additional 52,000 tons/year to reach this goal. At 67,500 tons/year and 19 percent of the waste stream, the food residuals sector looks inviting. That's why the city council started making plans last year to mandate separation of food residuals by July 1, 2001 for certain businesses, including large hotels, restaurants, grocery stores, bakeries, institutional cafeterias, food wholesalers and food processors, as well as trimmings from florists.
