VIROQUA, Wis. - Suzanne Huber of rural Westby, Wis., sold her first 2,000 pints of Sibby's Premium Organic Ice Cream in about seven weeks and was back at the Viroqua Dairy last week to help package the second batch.
Her organic ice cream - it comes in two flavors, vanilla and chocolate - is sold in about 20 stores in Wisconsin, Minnesota and Iowa. And Huber hopes to introduce new products, and sell them in more states, next year. She has been talking to a distributor that might put her ice cream in stores in 14 states, perhaps next year.
"I would love to take it nationally. There's so few (certified 100 percent organic ice cream producers) out there," Huber said as she put lids on the pint ...
