Tom Wright of rural La Crescent, Minn., has been making cheesecakes at his home for friends and relatives for more than 10 years.
Now, he and his wife, Cindy, have put their talents to work in a full-fledged business, Pine Creek Ridge Cheesecakes. Since September, they have been using the commercial kitchen at the Coulee Reg on Business Center at 1100 Kane St. in La Crosse. There, Tom mixes and bakes his cheesecakes, and Cindy decorates them.
"We've been planning this for two years," Cindy said of the couple's lease of a commercial kitchen and other upcoming moves.
