The irony of Mark Beerntsen's palate isn't lost on him.

"I'm not really a chocolate person," says Beerntsen, the thirdgeneration owner of Beerntsen's Candies in downtown Green Bay.

Although his tastes have perhaps been tempered over the years, the former railroad worker coyly admits sometimes he'll "eat four or five at one time ... and call it quality control."

That dedication to quality control - along with historic recipes and the art of handcrafting chocolates - has survived for 80 years at the shop Beerntsen's grandfather, Henry, started in 1925.

"This was his life," Beerntsen says, characterizing his grandfather's priorities as church, candy store and family, in that order.
