Every Friday morning 20 to 30 cheese dealers dressed in suits and ties congregate in the first floor of Green Bay's Bellin Building for one-half hour to buy and sell blocks and barrels of cheese.
A steady buzz of conversation gradually quiets after the starting bell rings at 10 a.m. Dealers call out offering and buying prices, some operating from phone booths that line the back and side wall of the room, others sitting in two rows of chairs facing a white board containing the selling price, bids and buying price.
