When Steve Crane opened a store in Maplewood in 2005,his wife, Janet, had something to say about what would be sold there. "My wife told me when I opened that I had to bring a cheese shop back to town," Mr. Crane said. Janet Crane, who had grown up in Maplewood, had fond memories of a cheese shop in the same location. So the cheese counter at Crane's Deli and Cheese Shop (really a refrigerator) is well-stocked with at least three dozen varieties, including Camembert, Stilton and Manchego. But the deli sandwiches also bring their share of customers through the door.The hugemuffaletta with ham, provolone, mortadella, salami and housemade olive salad is reminiscent of New Orleans ($7.75). ...
