Hydrogen peroxide uses for the year 2000. (Product Development)

Food processors have long used hydrogen peroxide (H2O2) in bleaching, aseptic-packaging and microbial-control applications, but other applications have recently been developed. H2O2-based fiber-modification techniques have made it possible to convert grain hulls, spent brewer's grain, nut skins and other leftover fibers into low-calorie flour-like products. H2O2 is also being used to improve color consistency in instant coffee, chocolate and other products.

Fiber modification and color improvement are two expanding applications for this long-established food processing aid.
