Restaurant kitchen design. (excerpt from the book Successful Restaurant Design)

A well-designed kitchen integrates several areas within one space. Fabrication, pre-preparation, preparation (hot foods, bake shop, dessert and salad), holding, assembly, service and sanitation are all commonly incorporated into a kitchen design. Each of the areas is driven by the menu and designed for the preparation and service of different items. Each must function individually yet also work in concert with other kitchen areas.
